After seeing OU's riblets smoked, I just had to try some. When we were po' folks I had used these in soup and beans. Never had thought of using them to smoke or grill. I know that chain restaurant sells them for a crazy price...so had to try.
Wow...found for $1 per pound

Rinsed and ready to season

2hrs pecan....they had to be smooshed together to fit the racks. I did rotate after an hour.

All done

Cooks snack

All I can say is they were great! I used Jan's Rub on 1 rack, my rib rub on 1 rack, S&P and honey powder 1 rack. and just S&P on last rack. Seasoned riblets were more flavorful.
