New to smoking (smokering?), and got a Bradley 4-rack digital on the reccomendation of a friend (he has the non-digital). Tried a few things since I got it 2 days ago (pork ribs, beef short ribs, gouda) with mixed results. I have my first batch of jerky marinading in the fridge right now. I hear good jerky is tough, and that's the one thing I plan on using it the most for. Great forum here, full of helpful knowledge/experience. Thanks!

That'd be great KC, always looking to meet and learn from more experieced smokers..ummmm smokerer's....smokerererer's(?). Hoping to use the Canada Day long weekend to try out my first batch of jerky, my first cold-smoked steaks, and hopefully another attempt at some smoked gouda.

Welcome, I have a soft spot in my heart for Edmonton, since I was born there, but that was 50 some years ago. Have fun with the smoker and remember to leave your vent open at least half way, mine is open all the way all the time. Ask lots of questions, there are a lot of members who are willing to share what they do. Remeber the only bad question is the oe you do Not ask. Now go have some fun with your new toy. ;)
