Some gooood ribs

Picked up a couple spare ribs this weekend.



Then turned them into St. Louis style ribs.



One rack with my Kansas City Rub (the lighter colored ones) and one with 50/50 BAMA RED/GP.



Smoked 3 hr with Hickory then foiled with a healthy splash of hot beer, 3 hr in the foil then 1 hr naked.



Wile the ribs were finishing I fired up my small pot for some sweet corn.



Dinner time!



Taby stole daddys plate.  >:(

Partner you sure know how to make a person hungry, ribs and fresh corn on the cobb... I guess I need to go get me some smokin ribs... :D

Looks awsome!! I get to do some ribs next week.  Now if Bradley would ever get their stuff together and take care of my broke door problem (3 weeks and counting)  but for the time being I guess I will just bungee the door closed or something

Loooking good..........the 3-3-1 method is a variance from the normal 3-1-1 method but looks marvelous.
Is that a bear with MY brisket in his paws?

I used the 3-2-1 on spares last time this time i'll try 3-3-1. They were tender but not fall off the bone yet..
