GB Jerky Question

Did a first run with my new LEM jerky cannon, taste and texture turned out great. Five lbs of Costco 12% GB and the LEM snackstick mix that comes with the gun, 1 hr smoke @140 then a couple more hrs at 175.

Definately will do again but I did have a significant amount of fat/oil on the outer surface. It was not objectionable but I was wondering if I should go with a leaner GB or maybe just blot the sticks off a bit with paper towel at the finish? I realise the fat content plays a big part in the overall flavor so I don't want to go too lean. Any input or advice?

Hey it looks real good. I can't say about the the meat but I know that Nepas puts his in a paper bag when it is done to absorb the oils.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.
