Most of have tried Kummok's, and it is top drawer, but there are some alternatives here that are tried and true!

Specifically, this recipe:http://susan.rminor.com/forums/showthread.php?t=105

Smokehouse Rob makes racks that are sold at http://www.chezbubba.com that are handy after you brine, and you are letting the fish dry either on the counter or in the refrigerator.

Key is smoking good salmon is the time you allow it to sit and dry out to form a pellicle prior to smoking.  It will taste good even if you skip this time, but is much better if you have the patience to just let it sit for awhile.

Good luck and Happy Holidays.

I'm intrigued by your handle......seems like an Apache would have to try REAL hard in order to get lost![:D][;)] (Kummok's "part Cherokee", according to "spoken" family history, but I was warned that the part is so small, like a 1/16 or something on my mother's side, that if I get a nosebleed, I'd lose any tribal lineage claim[;)])

As far as the smoked salmon salad, we eat salads with GRILLED King salmon pretty regular up here in oour household. I would think that smoking the salad would wilt the lettuce and wrinkle the tomatoes?!?!....(Sorry, couldn't resist....[:D][;)][:D]...the winter is starting to get loooong up here already!)  Are you after something akin to a tuna or chicken salad, but using smoked salmon instead? Or are you seeking a more crisp, leafy, vegetable type salad with smoked salmon accent?

35 years of extinguishing smoking stuff and now I'm wondering WHY!

Welcome to the Foum, Gary!  For smoked salmon pate, I have a super recipe listed on the site mentioned by nsxbill, specifically:

http://susan.rminor.com/forums/showthread.php?t=51

Works with other smoked fish as well.

Fantastic recipe JJC. I put a twist to it and stuffed some sauteed mushrooms with it and tossed them in the broiler for a second or two. Holy Cow!!! It was almost a God sighting revilation. (Except when I was young and dumb and got really drunk and played Black Sabboth at 78 speed backwards on the record player). Wow! That's dating myself. Anyhow, thanks for sharing.

JJC

You did that, too? [:D][:D][:D]

Thanks for the kudos on the pate recipe--the shroom thing sound delicious!
