Lox - sort of?

Started about a month ago to demo Spyguy's Lox recipe, as usual time got away from me and I was sitting with a couple of nice coho fillets that had been in the first stage dry cure for about 36 hours . Thinking they were toast I was going to pitch them but decided to rinse, soak and cold alder smoke and see what happened. Contrary to my typical mistakes it turned out great! The stuff disappeared like smoke and the family was screaming for more so I decided to screw up again. Basics were:

50%-50% salt-brown sugar
Dry pack cure in fridge for about 36hrs (rearrange occasionally)
rinse and freshwater soak for 30min (couple of water changes)
paper towel and dry for about an hour
Cold Alder smoke for 2 hours
Sprinkle a bit of Dill, vac bag and throw in fridge to equalize
Throw in freezer to hide from family

I fully intend to finish Spyguy's Lox recipe someday as it seems to have rave reviews, if only I had the time  :(

Curious if any one else has cheated and what were the results?

Vac bagged and headed for the fridge for some rest


I'll try to get some money photos at slicing time but the last batch disappeared before I could blink!

I love cold smoked salmon (and hot smoked too).  Those look good!  :D

I pretty sure I know why they disappeared so fast, I am surprised you had anything left...
