Turkey boulder

I've been wanting to give my bradley some loving and thought i would smoke a turkey boulder for some lunchmeat. Slathered with CT and a dusting of MAKs yard bird rub and into the bradley for an hour of apple smoke.

Im a newbie. What's CT? That turkey is looking mighty fine. What temp should you shoot for on the turkey bolders?

Smoking Alligator

Is it true that turkey should be cooked at no less that 325 degrees for safety?  I was thinking of doing a beer can turkey this weekend low and slow but I am having second thoughts.  Any feedback on this will be greatly appreciated.

I lost track of time and thought OH SH!T my turkey breast!! LOL
Ok i just pulled it out at 165. Ran the bradley at 250 the entire time and temps held at 245 and creaped up to around 260 at the end.
WOW did this turn out good! I tasted a piece that stuck to the netting when i cut it off..dang i gotta do this more often. The last boulder i did didnt have ct and a rub. It will from now on!



Now i gotta keep from snacking on it until it cools off and i slice it up 
