Sorry about asking this question again but the search I did, didn't quite answer all my questions. I am doing a 5lb bacon in cure right now but due to some issues can't smoke it this weekend. I understand its ok to freeze but do you just put everything in the freezer, cure mixture and all in the same freezer bag? Or do you soak and pat dry then freeze? Or does it really matter? I imagine you still have to let it sit overnight after thawing to air dry in the fridge to form the pellicle?

Thanks for the info.

You should let it finish curing. Then rinse, pat dry, vac seal and freeze.

If you dont have a vac sealer you could wrap tightly in plastic wrap then in freezer paper and freeze.

When your ready to smoke take the belly outta the freezer a couple days early to thaw in the fridge.

When thawed unwrap, pat dry and let sit in the fridge uncovered to form your pellicle.

Thanks for the info, makes perfect sence. I also have a vac sealer so it sounds like I'm set to go. ;D

Thanks Again
