Sunday Brisket - Mopping Opinions?

Yeah, I'm a mopper and like to try different things.

I separated the point & flat of a packer.  I smoked them both - hate to waste good smoke.  The point went into chili a couple of weeks ago.  The flat was frozen.  The flat is now ready to go into the pellet machine over night.  Yeah, smoked fat side down in the OBS.



I searched the fridge for food (nothing) and dug these out.  I could go real simple (apple juice, Srirachi, Worcester sauce) or one of the those shown below.  Any opinions?
