Mother Load of Butts

So I'm on my way home last night and a friend of mines wife calls me and asks if I would smoke up some pork butt for her son inlaws birthday.

I says Sure whens the party? She says next week end. Not a problem I'll start next Fri.

Then I ask How many people you feeding? She says 80 or so.

Crap, that aint goin to be a Fri night cook.

So I turn around and go to Sams to pick up some butts and figure I'll let them go all day today and into the night maybe even into Sun afternoon.



78.9 lb of pork butt

Then made up some butt rub, about 6 cups.



One down 7 more to go.



Half way there.



The other half.



Some trimmings for my next batch of sausage.



They went in the fridge overnight and this morn I unwrapped and allowed to come to room temp.



Fired up the Bradley and slipped them in.



Rolling 4 hr Hickory, after the smoke I'm gonna dump and refill the water pan, rotate the butts top to bottom and front to back and roll another 4 hr Hickory.

Did the rotate thing and started the smoke again.



Allready starting to take on some nice color.

Amazing I didnt think it was possible to that many at once in the smoker. Wow That much bulk is going to take a long time to come up to temp. impressive

Got tied up lastnight,,,,,,,,workin on daughter in laws jeep,,,,,,,,,,,again.

But  did get a couple more shots.

This was the 8:00 PM dump N refill the water pan and rotate.



Did the rotate thing again at midnight then at 4:00 AM

This is what they looked like at 8:00 AM



The IT ranges from 150 F to 175 F

Were on the home stretch now.  ;D

You did spend a lot of time hanging out with Sonny at the MWSO didn't you!! Seems like some of that how full can I get the smoker stuff of Sonny's rubbed off on you.
