Rump Roast Coast

The bottom line.  Pulled the roast at an IT of 114 and let it rest on the counter.  It coasted up to 134.  I've never seen that much coast  :-\  But it came out pretty good anyway.

Sorry for the lack of pics.  Things were kind of hectic.

Angus rump roast was rubbed with Rodak's coffee rub, then a beef roast rub.  It got 1:20 of Oak smoke.  OBS cabinet temp never even got back to 200.

Transferred to the pellet cooker with oak pellets preheated to 300.  Cooked until the beef got to 114.  Pulled it and the coast up started.  It rested about 40 minutes.

Got the Syracuse salt potatoes on and preheated the convection oven to 425.  The beef got about 8 minutes in the oven.  Sliced and served.  Whoops, pics  :(

Then I figured, at least get a shot of the beef roast.  We were well into it.



The interesting thing is that it came out reasonably medium rare.  Maybe I need new batteries.
