Crawfish Sausage!

Thanks Squirt for your input.  Here is what we came up with:
5 lbs pork butt
4 1/2 t salt
6 T onion flakes
1 t cure #1
1 t garlic granules
5 t finely chopped parsley
2 t crushed thyme leaves
3 t Cayenne pepper
1 1/2 t red pepper flakes
1/2 t allspice
1 small bay leaf, crushed
1/2 t Soileau's seasoning
1 t chipotle powder
1 lb crawfish tails

First, we ground the pork:

Wow - $1.11 per lb

Next we combined our seasonings and chopped up the crawfish:


We added these to the ground pork and mixed it all together:

Stuffed and ready to grill:

We sampled some  - not on the grill.  It has a nice kick to it, and we can't wait to grill some!

Love those 'used pork butt' sales at Schnucks..  (normally like 3.50/lb there)    Didn't realize you had one way up there.

Yes - we have had a Schnucks for about 7 years now.  It is not too far from our house, so we take advantage of those 'out of date pork butts' sales when we see them.

So is Soileau's seasoning a type of cajun seasoning or just a seasoning salt of some type?

Lon it is a bayou bend seasoning salt I get from squirt the cat it is very good stuff

Lon, they only sell it in small stores here in Central IL.  The family is from Louisiana and they mix it by hand in a small restaurant kitchen.  They drive around and stock the area stores every couple weeks.

It's good stuff.  It also has a serious kick, so a little goes a long way.

Lon,
It is very tasty, but it is very spicy.  If you don't want a lot of heat, don't use as much cayenne.
