Hi guys,

      Got a couple of yard birds under my belt now and am amazed and satisfied with the results.  Did a small bird last night and it came out fantastic.  Here is how it went down.

  • Brined overnight 1 lemon, 1 cup salt, one gallon water
  • Dried it off, rubbed with Olive oil, garlic powder, italian seasoning, cayenne pepper, cracked black pepper
  • Smoked with Cherry for two hours
  • Oven set at 250 (holding around 220 due to the outside temp) for 3 hours until IT hit 170
  • FTC for one hour

and TaDaa


It came out great!  My wife thought it was possibly the best bird she ever ate.  I thought it was a bit salty, but still great.  Only thing I didnt like was the skin was not crispy at all.

I got to thank a lot of you on here.  I never would have done everything this way if I hadn't read how well it has worked for most.  You guys are some really impressive cooks on this board

It sounds like everything went pretty well.  If you want the skin crispy you need to put it in your oven for the last 1/2-1 hour.
