I have 2 1lb fillets of catfish I want to smoke but not sure what temp to set the Bradley at and at what temp the fish should be when done. I am going with the peppered recipe out of smoke and spice which really sounds good.

For some execellent information about the internal temperature you should shoot for when smoking fish, Check out Smoking Fish at Home - Safely, by K.S. Hilderbrand, Pacific Northwest Extension Publication #238, which is available at http://cru.cahe.wse.edu/cepublications/pnw238/pnw238.pdf , and Smoking Fish at Home, by Chuck Crapo, University of Alaska Fairbanks Cooperative Extension Service FNH-00325, which is available at http://www.uaf.edu/files/ces/publications-db/catalog/hec/FNH-00325.pdf . These PDF documents may take a minute to download; click on the screen if nothing seems to be happening.  Or for a less authoritative opinion, check out my posting at http://forum.bradleysmoker.com/index.php?topic=107.msg318790#msg318790 .

An easy way to do catfish is to marinate in Italian dressing and just before cooking apply lemon pepper and just a skosh of cajun seasoning.  Really tasty.  Not sure how well it would do in a smoker but works great on a grill.

AMEN
Never try to teach a pig to sing; it wastes your time and annoys the pig.
