quick cheese question

Hello everybody. A couple of quick cheese question. What cheeses are best for smoking? I understand the process of letting it sit for three to four weeks before eating. My question is that if i want to freeze some of it should i put it in the fridge for a few weeks and then to the freeze or straight to the freezer? Thanks for any help stm

Freezing changes the texture of most cheeses so unless you're going to use it grated or melted, I wouldn't freeze it.  Don't worry; vacuum-packed cheese will keep for months (or maybe longer) in the fridge.

I tried freezing cheese a few years ago. NO GOOD! IT got real dry and crumbled. If you smoke it and vac seal then put it in frig it will easily last 6-9 months( I have) maybe longer.

My cheese lasted less than 60 days and I was out.  Now I have to wait 30 more days for my new batch to age.

Sounds like you need to smoke bigger loads.
