Stuffed Chicken Breasts

Sorry in advance.  I was too busy to snap any pics.   :'(        It won't happen again.

Anyhow,  picked up some boneless skinless breasts Friday night.  Brined them first with salt, sugar, lemon juice, and garlic.  Then I butterflied them and stuffed them with sliced tomato, basil, and swiss cheese.  Folded everything up and wrapped them each with 3 strips of bacon.

Into a 250 degree smoker with Cherry biscuits (for 1:20) until IT hit 165.  They turned out excellent!!  The only thing I didn't care for was how the surface of the breast that didn't get wrapped in bacon was kind of rubbery.  Full bacon wrap next time.

This smoker just might make a chef out of me.  The misses won't stop commenting about not having to cook anymore, and how glad she is that I still am "playing" with my Christams toys   ;D
