Zacks Hickory stix re-visited.

I'm trying stix this time using 5lbs. 80/20 GB. Using Zacks Hickory, canned whole jalapeƱos, and sharp cheddar instead of mild cheddar.
Last batch was good but needed more cheese and a Lil more kick so I chopped the jalapeƱos up whole. Last time I de-veined and seeded and used 93/7 beef.
Also I'm trying clear collagen casings and some leftover mahogany casings. 








This is my brand new scrap wood rolling cart. Caster wheels on one side and non caster on other. ( optical illusion, looks like no wheel on right side cause of pic)

Boy that will kick it up 2 notches and it looks like you got a bunch of cheese in those bad boys. Nice job!!

2hrs in. iPhone pics. Sorry! ;D
Temps are holding steady at 140 below and 130 above. LOL. (with fan) I looped and tied the ends so I can simply rotate them later easier. Yeah, stole the idea from another thread. :D ;D

First time using clear casings. Look kinda weird. Not as red as the mahogany for obvious reasons.   They taste better than last time and the last ones were good.
Gonna let em sit and then paper bag'em and vac seal tomorrow.
