Ka Honu

Looks great!  The only things I might suggest are...

    You can trim some of the fat "ribbon" between the point and flat before smoking. I think it cooks more evenly and makes them easier to separate after the cook.

    Separate the two parts before slicing and slice across the grain for maximum tenderness (the fibers are shorter so the slice is not "stringy").

Like Ka Honu stated try removin the big ol chunk of fat between the point N flat next time.  ;D
