Wild Turkey Breast

Hey All was fortunate this year during our turkey season and i was wanting to use my smoker to cook up my bounty.  I breasted out the turkey and was going to rub down the breasts and wrap them in bacon and was just wondering about Smoke time and the it i was shooting for. Thanks

I love wild turkey (not the drink  ;) )   I brine mine for 12 hrs min before cooking them.   Now I don't smoke hem I roast them in the SRG (CharBroil infrared) 

Here is my basic brine I use.

8 oz bourbon (cheap stuff)
1/2 gal water
1/2 sea salt
1 Tbs  white pepper
1 Tbs black pepper
1 cup apple cider vinegar
Live, ride, eat well and thank God!

I do like TMB stated but in the smoker.

Smoke for 2 hr with Apple (or some other light wood like Alder or Cherry)

You want to pull outta the smoker when the IT hits 160 F and allow to rest 20 min before carving.

If you want to crisp up the bacon throw it under the broiler or on a hot grill inderect heat for a bit turning every couple min.
