Those look real good!  Do they need to stay refrigerated prior to opening?

I think you should refrigerate them unless you put them in a hot water bath and use the normal canning process.  I am no expert though, I just know that for long term storage I think you need the hot water bath.  We do a lot of canning of peppers and we sterilize the jars and give them the hot water bath and they will last for years if they seal properly.  I would think you could sterilize the jars, give them the hot water bath and they would last a very long time without being refrigerated.

Try these they are really good. I have also done asparagus,  green beans and kielbasa with this recipe.
