Smoked turkey with the famous Jan's rub

  hello again everyone,
                well I am going to try a turkey.
     Question #1 should i brine and in what.( OK that's 2)
     Question #2 and this will probally be an opinion thing i guess   i am thinking of 2.5 to 3 hours of apple and maple smoke then shoot for about 140 degrees and toss in 350 degree oven, or should i wrap in foil and finish in smoker?
     also I finally broke down and bought a new puter so i may get some pics of this one.

Yes brine, I just keep it simple, salt sugar vinegar and what ever other spices you like, you can find brine recipes on here. I did turkey legs a couple weeks ago, smoked for two hours then wrapped in foil with butter and honey until it reached temp. Turned out really good if you like sweet.

If you're short on time or want the skin to be crisp, you should finish in the oven.  If not, it doesn't really matter.

next up I plan on trying my hand at bacon (my hangers are in the UPS truck as we speak) or sausage (my book is in the UPS truck also)

I used "Jan's rub" and 3 hours of apple smoke@ 225,left it in the smoker till 140 internal then wrapped in foil and popped in the oven until done.
Ingredients: •1 cup + 4 tbsp sugar
•1/4 cup Lawry's seasoned salt
•1/4 cup garlic salt
•1/4 cup + 1 1/2 tsp celery salt
•1/4 cup onion salt
•1/2 cup paprika
•3 Tbsp chili powder
•2 Tbsp black pepper
•1 Tbsp lemon pepper
•2 tsp celery seed
•2 tsp dry ground sage
•1 tsp dry mustard
•1/2 tsp dry ground thyme
•1/2 tsp cayenne
