Rub or Marinade for your jerky ?

Which do you guys prefer for your jerky ? And Why ?
Using a Dry rub or soaking in a liquid marinade?

When I make jerky nuggets I use a wet marinade using Soy Vay.

And when I make ground beef jerky I use a dry seasoning from Backwoods.

Both ways I use cure#1
Natural Gas 4 burner stainless RED with auto-clean
2 TBEs(1 natural gas & 1 LP gas)
OBS(Auberins dual probe PID, 900w finned element & convection fan mods)
2011 Memphis Select Pellet Smoker
BBQ Grillware vertical smoker(oven thermostat installed & converted to natural gas)

Do u just put the cure in the soy vay or put it on the meat it self and let it sit a while ?

You dilute the cure in a little bit of water and then add that water to the Soy Vay. Then add the meat to the Soy Vay.

Muebe, I know you smoke your nuggets have you ever tried to do them in a dehydrator or are the pieces not uniform enough?

My smoker has a fan in it so it works as ghost as my dehydrator. I have tried them in a dehydrator and it works also.

Do you think a teriyaki marinade would work ??
i love to marinade my deer meat in that before i throw it on the grill.
The marinade i use is a little thick... do i dillute ?
Maybe do the same thing as the soy vay. just add some dissolved cure to it and place the meat in it.

Never done venison.

Others have with good results.

I only do muscle jerky.  It's marinade for me all the way.
There's room for all of God's critters right next to the mashed taters and gravy!
