Rolling Smoke On Salmon & Rainbow Trout Today

Been wanting to have some smoked fish for a while now so today is the day.  :)

Got the bradley all warmed up


Going with three hours of hickory.

Getting some boogers on the rainbow but I expected that. Lake Superior rainbow are full of fat.

Using Kummok's brine as always. Thats about it. Its never failed me yet.  ;)

All done. 7 1/2 hours. just about what I figured on. Resting in the fridge till tomorrow. Smoked fish for lunch tomorrow  ;)

WOW!!!  I would love to smoke some fish.  Too hot to fish around here.  Maybe this fall I can get out and catch a few trout.
