Low carb/diabetic barbecue sauce

Illinois Hokie

1 small sweet onion, finely chopped
1 clove garlic, minced
1 Tbs EVOO
1 1/2 cups Diet Dr Pepper, divided
1/2 cup Heinz Reduced Sugar Ketchup
2 Tbs yellow mustard
2 Tbs woozy
2 Tbs sugar free pancake syrup
1 Tbs cider vinegar
1 Tbs soy sauce
1 Tbs liquid smoke
1 Tbs Splenda or Truvia
1 tsp garlic powder
1 tsp chili powder
1 tsp black pepper
1/2 tsp ground cumin
Pinch ground cloves
Hot sauce to taste

Add 1/4 cup Diet Dr Pepper and the EVOI to a 2 quart sauce pan. Saute onion and garlic until translucent, 4-5 minutes. Stir in remaining Diet Dr Pepper and all remaining ingredients until well blended. Reduce heat to low and let simmer 20-30 minutes. Poor onto blender and blend until smooth. Will keep in fridge up to one week.

My wife and I are currently losing weight on the South Beach Diet. One great thing about barbecuing is that it's low carb diet friendly, except for the sauces. So I dabbled until I put together this recipe. My wife and I love it, and my wife shared some with her coworkers and they couldn't believe that it's low carb.

I'm guessing you prefer a sweeter BBQ sauce?  Nothing wrong with that.

Actually I go for a sweet base and then set it on fire with pepper sauce. I like sweet/hot.

Keep in mind, though, that aspartame (Nutrasweet) loses sweetness while heated for a long time. This sauce actually didn't pick up a lot of sweetness from the soda. The Splenda and syrup are the primary sweeteners.

My wife is Celiac and has gone Paleo the past couple of years.  I joined in December and have been dropping a few lbs.  we are always looking for good sauces.  I will have her try this one out.

Giving up the grains and legumes has been hard, but love the meat.

I've been using this in some of my sauces. Seems to work out just as good as sugar.
Picked it up at Costco or SAMs.

The wife used to be into agave but she is not a fan anymore.  I will ask her but I think the issue is still the glycemic index.  Lower but not low enough.  Especially if weight loss is a goal.

Just a note, that with Agave you will also use less amounts in a recipe that calls for sugar, so that will also lower the calorie count in what she is making. I use Agave a lot, and I'm beginning to noticing a lot of brands are adding fructose syrup, so if you go the route read the ingredient label and avoid those brands. The brands from Costco, Sam's and BJ's are 100% Agave.

I will go through some of my cook books and see if there are any. Doing a search online may give you many recipes as a starting point. I have used the recipe below, it was pretty good, and should be easy to tweak. You can up the Splenda for extra sweetness. I also used an immersion blender to make it a smooth sauce, and it also thickens the sauce up.
