I was just wondering how many of you have ever used cherry to smoke cheese with.  The batch I did last Sunday I used apple, I know no pics it didn't happen, I will be sure to get some this time.  Thanks for all your help everyone, looking forward to all the input.

I have some cheese in the fridge right now that I was going to smoke with Cherry tonight.  I have never used cherry before, so I would be interested to see what others have to say.

We were working up north this week and I made a trip to LeRaysville cheese factory, I just didn't want to take a chance on the cherry and not have it turn out very well and have 50 bucks worth of cheese in the fridge that I don't care for.

I've used cherry on cheese and liked it. Not necessarily a favorite over other flavors but definitely decent. I wish I could remember what cheeses I used it on but am too old for that kind of specificity.

I smoked my cheese last night like I wanted to.  Temps in the single digits are good for something, no cold smoke adapter needed.  Cabinet temp never got above 65.

Pre smoke layout, so I do not forget what cheese I had.

All packed up for the long wait.

Nice work, I may get some more today and use the cherry on it, and just stick to the apple for what I got earlier in the week.

Just remember the harder the cheese the longer the wait

Love cherry and apple on cheese. But then i take a spell when nothing but Hickory smoke is good enough on any thing.  8)

What is your recommendation for xtra sharp or harder?  I was going to wait 2 months for first samples.

Decided to give the cherry a try.....

Turned my back for 2 seconds and our 5 month old golden retriever had herself a snack while it was sitting on the edge of the table, trimmed them off and continued on.

After 2 hours of smoke

All packaged up and now the hard part.....waiting!

Had a problem with on of my batches. For some reason lots of white mold when I went to slice. Never had that with my smoke cheese in such a large amount. Hate it. It cuts off to much smoke. Sealed and in bottom of fridge just like always.

Viper, are you saying this only happened when you used cherry and not on other flavors of smoke?

viper125

NO not at all sorry. Not sure why it happened. Was using special blend for this.

Thanks for the info.  I did 4 pounds of cooper and 4 pounds of pepper jack last weekend using apple, it's in the bottom drawer of the beerator right now along with what I did today, I'll keep a close eye on it for sure.  I have a bunch more to do in the morning probably use apple again, I sampled the cooper tonight still a little ashtray taste to it but I like the flavor of it.

Well I like heavy smoke, and found after one or two pieces it tastes just fine to me right out of the smoker.  :o
