Stuffed chicken.

Well weather is a little better temps up to 25 and its sunny. Either way I felt better last couple days. So wife says its been a while since we smoked any thing. I said id go check the freezer and she says well I did bring a chicken up yesterday. LOL!
So I brined and Left over night and washed and drained. Brought to room temp and started smoker. Set to 225 degrees and went to get pucks and all out. So I got out my alternative smoker from my christmas exchange and some apple pellets. Works great! Also he got me a long one so I cut it in half and now have two. One for my grill or my chicken cooker.
So first the brined chicken. You can tell she had a nice rest the way she just sprawls out there can't you?



So next a little rub Down with another christmas present Jacks Old south Huney Muney Chicken Rub! Im pretty liberal when it comes to rub.







Also a little bit of tying her up... Habits die hard. ::)



Then off to the smoker we go! And she comes out like this 2 hours later.



Wife got her stuffing ready and then stuffs it and the pan in places I cant repeat.



All done and ready for the table.



Wife says time for dinner. shes got Smashed Garlic taters, Gravy and home made biscuits



Close up now because in a few short minutes wont be able to see any thing




And it Was good! Well till next time! It felt great to smoke again. Hopefully sausage soon. Not using my Kirby cannon is killing me!

The chicken looks good but it is better to hear you are up and around and feeling better. :)

Thanks every one. It was good. Yes i have good and bad days. Take them as they come. You all been doing some mighty fine things yourself. Im sure come better weather the RA and a couple other things will ease some. So expect to see some more! Thanks for the great review. Always makes me smile.

Nicely done.  Did you smoke it the entire 2 hours?  What kind of wood did you smoke it with?

Thanks guys don't get to do many meats as of late. So the kind words are appreciated even more. I brined this bird over night. Then smoked for two hours at that temp. I also used  apple.  Actually I like stronger smoke but this was good. And the wife loved the light smoked flavor. I always hated to smoke a whole chicken as I love stuffing.  But this way I got smoked chicken, stuffing too!

Well truth is we just finished the left overs tonight. Had two of my grand sons over. They ooo and owed about about my ham and the chicken, both leftovers. Along with smashed taters and green beans. Love those two boys. They never shut up about how great and Delicious grandpas meat is. Best in the whole world they say. I cant get enough of them. LOL! And at 4 and 7 that's quite a compliment! These are both normally picky eaters, but if i make it they dig in with out so much a whimper or even bother to taste first. And they love helping make and smoking them. So I think unlike my grand dad. I have at least two to train out of 13. Who knows i may  convert the other 11 grandkids some day. LOL!
But always glad to make more if company calls first. LOL!

Well just happy someone is interested to learn. I feel these things need passed down and remembered. Would hate to see all my stuff sold to a stranger. Especially with 5 kids and 13 grand kids. But i think i have planted a few seeds. Now to watch them grow! ;)
