Smoked Mushrooms

Was cold smoking some cheese this weekend and threw in some baby portabellas (crimini) in the smoker. Left them in for only about an hour.  Man they really sucked up the smoke! Used them in my scambled eggs and it was superb! Nice meat substitue if you are on a low fat diet.

The only problem is they don't last long. If you did a large batch you would need to dry them or can them or something.

Pics?  What kind of cheese did you smoke?  Mushrooms sound good.  Wish I could see what they look like...

Will have to give that a try.  How do onions fare in smoke? I agree need to use right away.  Ripe mushrooms not good for digestion.

Sorry no pics. I smoked some cheddar and some pepper jack.
