Wanted to report that after a month we tasted the cheese that I brought back from Saudi and it is fantastic, just the right amount of smoke flavor.  I gave it 2 hours of Cherry Smoke and since it was before I got my Auber I functioned as a human PID turning the SG on and off to maintain the temperature between 75 and 100 degrees.  Heading for Saudi again tomorrow and will be bringing more cheese back for sure.
