It's going to be a little while before I do a chicken, and I realize that personal preference plays a huge roll here, but what smoke do you all use on your yard birds? I'm planning on ordering some bisquettes and just trying to come up with ideas. Any thoughts? Opinions?

I did pecan yesterday and it had a good mild flavor.

I like to use Apple or Alder with poultry

I know when I started usingg my Bradley I bought every wood available
but over time I have basically settled into these:

Heavy wood flavor
Oak - Brisket, other red meats and sausage
Hickory - Pulled pork and sausage

Milder wood flavor
Pecan - thinner cuts of meat, chicken, some cheese
Apple - thinner cuts of meat, chicken, cheese

I do keep a small asst of Aulder, pacific blend, and cherry but the
ones above I buy in bulk when I find a good deal.

Apple & Pecan is nice.  Just alternate the pucks.   Or drop the open packages on the ground.   That always worked for me.  :o

I'll cast my vote for apple - gives a nice smoke flavour without being overpowering.

I prefer pecan or maple.

As you mentioned it is a personal taste. The below link has a nice guideline:

Looks like apple and pecan are pretty high up there

Haven't done any chickens, but I use apple for turkey breast.

I did 2 hours of Alder for my first smoke....mmmph...I'm going with the others with Apple for my next attempt.
