What is the best probe to use. The free hanging or the wall mount?

Hmmm, kinda hot topic. There are two camps here. Personally I got the wall mount probe and it works for me.

The problem with the wall mount is that it takes a fixed temp. So if your meat is lower than the probe you are probably getting a reading that is lower than what the meat is seeing. With the hanging probe you are able to put the probe wherever you need to be.
I originally had a wall mount, took it out and used it as a hanging mount until I bought a new hanging probe.

Thanks guys. Would it matter with a dual probe?

No - one probe is for the food so that would be a "hanger" type, the other is for the cabinet.
