Dry Curing Cabnet Project

Well all the electronics arrived today and a panel to house them in, I will be using a beverage center that will be delivered Thursday this will take some time to do with all the holiday's here.





More as things progress.

Custom Hard Cure Cabinet for Salami

Been mulling over a project just like this.   I have a buddy in the restaurant refrigeration business looking for ma a good deal on a used piece of equipment suitable.

Please take time and post copious notes, pics, and links to parts etc while you build.
Many (like me) will follow i  your footsteps.

The power plugs fuse holders are from Jameco Electronics in Belmont CA, PID'S and Panel and switches are from Auber along with the sensor's.

All the holes are done PID's I used a 1 1/4" conduct punch, all the others were 1/2" conduct, I used a nibbler punch to square up the PID holes and the power plugs, switches were just drop in.










The three small holes on the side are for the sensors. Next thing is to do all the internal wiring.

The control cabnet is now wired and running the final hookup will be after the first of the year.

We unpacked the mini fridge, and started testing the system. We will not be running any sausage till we are back from our trip.



The control is almost as big as the cabinet.
