Anyone one smoke a Texas hen before?

I bought a seasoned 4 lb Texas hen and was wondering how to smoke it. Any help on this?  Thanks Cliff

Just wondering what's the difference between Texas hen and a Kentucky hen

I had to google this. Are you talking about a boneless chicken stuffed with pork tenderloin?

If so I would smoke it at 225 - 250°F, and apply about 2 - 3 hours of smoke; pecan would be my choice, but apple or maple will work well. Continue to cook until your internal temperature is reached. As for the internal temperature you want to pork to be 140°F - 145°F, and the breast should be around 152°F - 155°F.

Don't know if weather patterns down that way are similar to this area or not, but I know that the reason people from SD end up in MN is because MN sucks! (This is also the reason for our incessant winds).

Now when I lived in Texas, I married a gal from Tulsa. When I divorced her she decided to go back home. Perhaps the hen was simply going back home.  ;D

Yes a Texas hen is a pork tenderloin wrapped inside a boneless chicken.  Thanks for the help Habanaro smoker. Great help on this forum.  Cliff
