Trusting your thermometer?

I tested electric thermometer in boiling water and got 100 degrease C. Bang on, while cooking my pepperoni it came to 156 and I pulled it. It seems very juicy an cooked very quick. So maybe my old thermometer was out of wack but I'm just weary about it. But as long as I got the 100 in. Boiling water I should be good right?

While what you did is the commonly accepted quick validation of a thermometer's accuracy, it isn't a confirmation of accuracy across all temperature ranges.  To get that, you'll need other tests.  And you've already done one.  You cooked food to your desired temperature reading and got the results that you expected.  I think your new thermometer is doing just fine, based on the results you have gotten.
