Hello everybody got two smokers full of pork bellies. Would it be okay to pull the bacon off at an IT of degrees if we are planning on cooking before we eat it. Thank you in advance

You can remove it at any IT, as long as you have applied the amount of smoke you wanted. I believe Kutas removes his bacon at around 130°F.

Your bacon will require longer cooking time in the frying pan, so if it has a lot of sugar just be careful during frying that you don't burn the bacon.

Ok thanks I was thinking along those lines but wanted to make sure i didn't get anybody sick by pulling it at an IT of 140 or higher. Thanks again

After I do my curing I cold smoke mine. Just have to make sure you fry it like regular store bought bacon. 100's of pounds no problems.
