Yup salmom is always a good thing. The weather is cool here so i thought now would be a good time to get some done.

this is store bought  waiting for the next batch of caught from my buds. weather makes a difference  got to keep it cool and as you can see we got snow on the ground  so the time was right
and your salmon looks awesome. which way did you do yours.
1 qt cold water
1/4 cup kosher salt
1 cup brown sugar
3/4 cup maple syrup (use the best you can get it makes a difference)
1/4 cup rub (I use jans and it works very well)
brine 8-10 hrs 
dry till pellicle forms
2 hrs 100
2hrs 150
2hrs 170
to IT of 145 (or there abouts. I go by how it looks and moisture content.)
glaze with syrup after 4 hrs   at least couple times
and tada its done

You DO have a source, 10.5...you just have to come up and help pull them outta the water! I'll post a poorly exposed pic of some of last Sunday's catch that totaled 80# in vac-sealed pouches of fillets....

I filled 8 racks with coho strips yesterday. I'll bag them today but there has already been shrinkage! The boat's in the driveway for the winter so other than kayak caught salmon I'll be eating out of the freezer.
