Gumbo Ya Ya

Needed something for lunches this week. Goes something like this.



One Green and Red bell pepper, One medium sized Onion, One Stalk of Celery



Two pounds of Andouille Sausage cut into slices and 1/4rd. 1 1/2 pounds of shredded chicken meat. ( I used chicken tenders chopped and pan fried with Salt Pepper and Garlic)



The Seasonings



One cup of Butter and One cup of Flour (Added in 1/3 cup intervals) (Due to lights Roux looks lighter in color than actually is)

Starts off over low to medium heat stirring CONSTANTLY as a Blonde Roux



Then it will darken to a Peanut Butter color



Then a Chocolate color



Once the Roux has reached a Mahogany color add the Peppers and continue to stir constantly for 30 seconds then add the Onion and Celery stir for 30-45 seconds more



Slowly add your 10 cups of Chicken Stock continuing to stir to prevent lumps



After bringing to a boil and then simmering for a bit. Make yourself a bowl and enjoy

so I says to the wife "hey look at what chris made" and she says " well I have the stock from the turkey in the beer fridge and there is some turkey in the fridge and you can use summer sausage from the last batch"  so guess what I have simmering on the stove!  lol
