Turkey Size

Ordering holiday turkey this week.  Any advice on what size will fit our 4 rack Bradley.
Planning to smoke whole and finish in oven...all help appreciated.

You "might" be able to get a 14# in your bradley if you hang it or stand it like you would doing a beer can chicken. The stands for doing a turkey are available. Smaller birds usually turn out more moist as they don't spend as much time in the smoker as a larger bird that can be overcooked in some areas and undercooked in others.

The one I did about two weeks ago was around 15 pounds.  If you tie the wings tight you could probably go another 2 pounds larger.


Habanero Smoker

I have cooked a 14lb. turkey horizontally. I had to truss it, and had to rotate it frequently. Since then I roast/smoke them vertically, and they cook more evenly without rotating and faster. I got my vertical turkey roaster from Spanek. Also his Spanek's American Seasoning Blend is great on poultry. There are several turkey roasters out there, but this is my favorite.
