The venison pastrami project

Today is the culmination of a long journey.  For years I've wanted to make a venison pastrami.  For one reason or another it just never happened.  Alas, the day has arrived.  History will likely record this as the most difficult pastrami I've ever procured.  We hunted a walk-in area only...and I had to hike 100 lbs of meat out on my back.  As I look at this pastrami I can almost feel the strain in my legs.  Now the work is done and I can sit back on a cold, rainy day, and watch the smoker work it's magic.

Thanks for posting! The pictures show how far back the plan goes. Reloading and making sure its all right for when and if you get the shot.  180 Accubonds? Nice deer too. Mind giving us a little detail on how you make pastrami and how it turns out?
It's going to take a lifetime to smoke all this.

Just curious to here where you got your buck. I hunt SE Wa for mule deer. I'm guessing that buck was shot in SE Montana?
