Bacon Hook

Well I now have 16# of bacon curing. My questions is I have always put the bacon on the racks when smoking. Would hanging with hooks do a better job?

I have done it both ways and have not noted any difference just my opinion.

I also don't find any difference, other than you get rid of the tray marks. If you are using frogmats, the marks are pleasant to look at. Any way, when it is sliced the marks are not noticeable.

I made some hooks out of 3/32 stainless filler rod,also have done both ways and don't find any difference

I used hooks for a 6 lb belly cold smoked over 3 days and found that it stretched, the middle section got much thinner. It didn't affect the flavour but the thinner section was dry.Now I have bacon hooks I don't use.

Thanks all for the replies. Guess I will save my money and keep using the racks.
