Smoked Cheese is Good!!!

Thanks guy for all of the tips on this site!!

I decided that I wanted to try smoking cheese...so i read quite a bit here and then loaded the Bradley.

Cut my cheese into  1"x 2"x 6" pieces
Used Sharp cheddar and Pepper Jack
4Hours in the Apple smoke with the short cord unpluged

Temp did get about 90 so I had to rotate the Pepper jack a few times...it was begining to melt, but the cheddar stayed firm.

After smoking I paper bagged the cheese and fridged it for about 6 hours....Then I wrapped it nicely in aluminum foil. It smelled just like everyone said... like an ashtray..lol

That was on December 16th...on the 18th I couldn't take it...so I tested the cheese...GOOOOD STUFF WOW!! my 9 year old son tried it on the 19th and he loves it to! I just gave some to my 92 year old grandmother to try  (she had never tasted "smoked" cheese in her life!) and she loved it.

Of the 12 sticks that I smoke on the 16th..I am now down to just 1 package of cheddar and 3sticks of the Pepper Jack it is the 21st!!  ;D

 Sounds like success. Smoked cheese only gets better with time. As for your temp reaching 90 a couple things you can do. I will put a block of ice on a tray in the lower rack. Or if you can crack the door a bit.

Congratulations on your success. 

I think you'll find that you'll like the cheese even better after it ages for another three weeks or so.

One of the things that is a challenge for new cheese smokers is getting the fridge stocked.  I keep a stash of cheese in the back of one of our refrigerator drawers.  And a couple of months before the stash is exhausted, I smoke a new batch.  That way the cheese has enough time to age and for the flavors to mellow a bit before it gets used.  It's also handy if I smoke some cheese for a friend or neighbor.  The deal I make is they supply the cheese, I'll smoke it.  So they have some cheese ready to eat when I give their cheese back, I'll swap a couple of packages of aged cheese from my stash for some of the cheese they provided.

I still haven't tried to smoke cheese, just another thing on my to do list
