well i got done with my beef roast

just a smokin

 well this is my roast after it has sat in the fridge over night with a rub on it



going to head down to the smoke house ,just hoping i dont fall on the ice or slippery snow



now at smoke house going to get started



been smoking now for a couple of hours , just had to go and take a peak ... curiosity ...  :)



well i'm done now , been smoking for about 3-4 1/2 hours , internal temp of around 146 F



i had went and placed this in tin foil with some apple juice and wrapped tightly and again placed in the oven in the roaster, making sure of course that the heat here was all off



after it had sat in the cool oven for a couple of hours i took it out and started to slice/sample it all up ...mmm...mm... was good



all done slicing now , tastes good , well maybe a little to much red for some , however looks/tastes good for me  :)

Looks darn good to me!
I'd pile some of that on a French roll and go to town in a heart beat!  ;D
