Help on my first ham

I once bought a couple of butts from a neighborhood grocer, took them home and immediately froze them. Months later I thawed them to make pulled pork and one was no good. Went back and the proprietor cheerfully exchanged it for a fresh hunk of meat. It pays to do business with mom and pop type businesses I think, pretty sure Costco would have told me to go pound sand. Although I do buy most of my brisket at Costco, their prime grade is usually WAY cheaper than anyone else has choice.

Yeah...this is a mom and pop place.  I'll be doing lots more business with them.
