Bratwurst & Bockwurst

Made both bratwurst & bockwurst yesterday and today.  Followed Lea Poli recipes on both.  Added more pork fat to the bratwurst this time around and it added flavor (pork fat rules!).

Bratwurst finished and on cookie sheet to go into freezer to keep their shape when frozen.


Brat's packaged:

I will note here that bratwurst is my favorite non-smoked sausage.  Yum.  And of course we did do a sample taste test, it was good.

And for the Bockwurst:
This is the meat (semi-frozen) chopped into 1" squares and the cream mixture ready (it was really thick).


Into a baggie to get all the flavors happy happy (about two hours in refridge)..


Hanging to dry out before packaging for the freezer.

And we did a taste test with one with spicy mustard.  Good taste.
