SCOTCH EGG TIME!

these are done with  1/3 pork sausage ( plain old breakfast sausage ) 2/3 ground beef  pinch of nutmeg, pinch of cayenne pepper. I did 6 eggs app.3.5 oz of meet per egg  21 oz total. eggs were soft boiled/steamed which works well as the egg was not dried out after smoking. rolled egg in flour-wrap in meat mixture-roll in flour again-dip in egg wash-roll in bread crumbs. smoker at 225 used special blend (1 hr.) left in smoker total 1 3/4 hr.  felt it was not quite cooked enough because of the added pork so fired into the oven at 350 for extra 1/2 hr preheat included in time. mixed honey mustard and mayo to use use a dipper. I will try different spice blends on these cause I think the options are endless. wife and number 3 daughter think they are great (me too). I don't know if straight beef will hold together when wrapped around the egg, a binder will most likely be needed. mix and match the meat combo and spices.  these will get done here on frequent schedule
