I have been smoking meats on and off for awhile and have up until now made my own smokers, my wife has had enough of my hit and miss quality and purchased me the digital "Jim Beam" version for my birthday over the weekend and I cant wait to get started!

One of the things I do to try to maintain consistency is to prepare what I call a smoke plan before I smoke something for the first time.  Contains information such as temperature, type of wood used, duration of smoke application, finished internal temperature, how much the meat weighs, etc.  Some of my smoke plans are laid out by the time of day.  This helps when I'm doing some smoking for an event where the meat needs to be ready by a specific time.  The next time, all I have to do is pull out my old smoke plan and my planning is pretty well done.  And, if I decided something needed to be adjusted, I have notes on the smoke plan about what I did and how long things took.
