Fish Dripping On Lower Racks
« on: July 26, 2015, 07:52:54 pm »
Hey guys, just a quick question,  I have smoked a lot of fish, but every time I smoke it I get stuff dripping from the upper racks onto all the lower racks of fish.  What do you guys do to prevent this or is there nothing you can do?

I haven't ever had that problem.  What kind of fish are you smoking?  What kind of brine do you use?  What schedule of drying, heat, and smoke do you use?

I've had this with mackerel.  I smoke them hanging down from the tail, and that means there is only one rack involved.  With something like salmon, you shouldn't have anything dripping down unless you are going way way too hot.

I get that a lot when smoking northern pike.  There's just a lot of liquid in the flesh of this fish that has to go somewhere and not all of it goes up through the vent.
