Pork Side Ribs

Just catching up on a few other things I've smoked in the Bradley.  This one is a pork side rib, St. Louis cut.  Once again, I did this as per Aaron Franklin's youtube video, and used the same rub he did (equal parts kosher salt and coarse ground pepper, plus a little garlic powder, onion powder, and paprika). 

I smoked these at 240F for a total of 5 hours, and used 2 hours of applewood smoke, since it's pork.  At the 3 hour mark, I sprayed it with a half apple cider vinegar half water mixture, then squirted a half bbq sauce half water mixture, and let it cook for 15 minutes.  After that, I wrapped in foil for another 2 hours.  I didn't take any temperatures, but used a toothpick to check to see if it was done.

The ribs were excellent and fall-off-the-bone tender.  I think I'm getting the hang of this smoking thing, and loving it!  Here's what it looked like when I unwrapped it:
