How many bisquettes do you typically use to smoke an 8 pound pork shoulder and how long.

I use 12 pecan bisquettes, which is a total of around 4 hours. The total time can vary, the shoulder is done when it is done. A fairly good guideline for cooking butts in the Bradley is 1.5 to 2 hours per pound. I've seen times from 12 hours to close to 24 hours. The variations in time can be caused by several things; ambient temperature and wind, which can effect cabinet temperature recovery times, to preventing the cabinet form heating to its full ability. The cut of meat can also have an effect on the cooking time. What temperature you cook at, and what temperature you want to take the internal temperature. If it has a lot more tough collagen than the average cut, it will take longer to cook. All play a factor during the cook.
