Anyone have any turkey sausage recipes to make use of some cheap after Christmas turkeys?

After searching the forums I came across Tenpoint5's turkey andouille sausage that sounds interesting that I may try. Still open to recipes and tips though.

You can also do a search for chicken sausages. The two types of poultry should be exchangeable.
