Ribs this weekend...

Gonna smoke a couple racks of ribs in my new MES this weekend. I've always used the 3-2-1 method and will most likely use that method again. I follow a lot of videos in YouTube from Malcolm Reed. If you haven't checked him out you should. I'm all ears though if anyone has any advice or tips on a good rub or anything else when it comes to ribs. Cheers.

Rub: 2 parts pepper to 1 part salt ( ribs are thinner than most cuts of meat ) then a light dust of garlic powder and onion powder.    Cook with Hickory ;D and I put sauce on the side for individual taste.

Old hickory is correct with his/her version of a rub but I also add ground cumin and ground coriander and rub everything in - YUM!
